Ingredients

  • 50g butter, softened
  • 1 cup caster sugar
  • 1 egg
  • 2 large bananas, mashed (1 cup)
  • 1 1/2cups self-raising flour
  • 1/2 teaspoon cinnamon
  • 1 tablespoon milk
  • 100g Cadbury Dark Baking Chocolate, chopped
  • 1/3 cup pecan nut halves, chopped
  • 1 teaspoon cinnamon sugar

Method

  • Step 1 Beat together the butter, sugar and egg. Stir in the banana. Add the sifted flour and cinnamon with the milk and stir to combine. Stir through the chocolate.
  • Step 2 Pour the mixture into a greased and lined 22cm × 12cm loaf pan then sprinkle with the nuts.
  • Step 3 Bake in a moderate oven 180°C for 50 minutes or until cooked. Sprinkle with cinnamon sugar and then cool for 10 minutes before turning onto a wire rack to cool completely.
