Ingredients

  • 125g unsalted butter
  • 1/2 cup (110g) caster sugar
  • 2 eggs
  • 2 teaspoons vanilla essence
  • 1 cup (150g) self-raising flour
  • 1 1/2 tablespoons cocoa powder
  • 1/4 cup (60ml) full-fat milk

Vanilla cream topping

  • 125g cream cheese
  • 1 egg
  • 1/2 cup (110g) caster sugar
  • 1/4 cup (60ml) full-fat milk
  • 1 teaspoon vanilla essence

Method

  • Step 1 Preheat the oven to 180°C. Grease and line the base of a 20cm round or square cake pan.
  • Step 2 Cream together butter and sugar with electric beaters in a large bowl until pale. Add eggs one at a time, beating after each addition, then add vanilla. Sift in combined flour and cocoa, add the milk and stir until ingredients are well combined. Pour into the prepared pan and set aside.
  • Step 3 To make the vanilla cream topping, place cream cheese in a bowl and beat until smooth, add the sugar and beat to combine. Beat in remaining ingredients then spread over the cake mixture in the pan. Bake for 40 minutes or until a skewer inserted into centre comes out clean. Cool completely in pan, slice into squares and serve.
