Ingredients

  • 2 egg whites, at room temperature
  • 70g (1/3 cup) caster sugar
  • 1/2 tsp vanilla extract
  • 60g butter, melted, cooled
  • 75g (1/2 cup) plain flour
  • Pinch of salt
  • 200g white chocolate melts, melted
  • Assorted edible glitter, sprinkles or coloured sugar, to decorate

Method

  • Step 1 Preheat the oven to 180C/160C fan forced. Draw three 8cm-diameter circles on a piece of baking paper, about 5cm apart. Place on a baking tray, marked side down.
  • Step 2 Use electric beaters to whisk egg whites in a bowl for 2 minutes, until frothy. Add sugar and vanilla. Whisk until combined. Slowly whisk in butter until combined. Sift over flour and salt. Use a metal spoon to fold in until combined.
  • Step 3 Place a heaped teaspoon of batter in centre of each marked circle on paper-lined tray. Use back of spoon to spread evenly to the edges. Bake for 5-7 minutes, until edges are golden.
  • Step 4 Working quickly, slide a spatula under each cookie to loosen. Place a fortune message on top of each. Fold the hot biscuits in half to enclose, pressing edges together, then bend in half the other way, over the rim of a glass, to create crescent shapes. Hold for a few seconds. Place cookies in muffin pan holes to retain their shape while cooling. Repeat baking and folding with remaining batter.
  • Step 5 Dip each cookie in melted chocolate, shaking off excess. Place on a baking tray lined with baking paper. Sprinkle with the decorations. Set aside to set.
