Ingredients

  • 180g dark chocolate, chopped
  • 150g butter, softened
  • 3/4 cup caster sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1 cup hazelnut meal
  • 3/4 cup self-raising flour, sifted
  • 1/4 cup orange juice
  • 1 cinnamon quill
  • Double cream, to serve

Spiced oranges

  • 2/3 cup caster sugar
  • 2 medium oranges, thinly sliced

Method

  • Step 1 Preheat oven to 180°C/160°C fan-forced. Grease a 3cm-deep, 19cm x 30cm (base) baking tray. Place chocolate in a microwave-safe bowl. Microwave, uncovered, on high (100%) for 1 minute 30 seconds, stirring with a metal spoon every 30 seconds, or until smooth. Set aside to cool slightly.
  • Step 2 Using an electric mixer, beat butter, sugar and vanilla until light and fluffy. Add eggs, 1 at a time, beating well after each addition (mixture will curdle). Add chocolate. Beat for 1 minute or until just combined. Add hazelnut meal and flour. Stir until just combined. Spoon into prepared pan. Smooth top. Bake for 30 minutes or until a skewer inserted in centre comes out clean. Set aside to cool slightly.
  • Step 3 Meanwhile, make spiced oranges: Place sugar in a large, heavy-based, frying pan over medium heat. Cook, shaking, for 6 to 8 minutes or until sugar has melted. Reduce heat to medium-low. Cook orange slices in sugar, in batches, for 4 to 5 minutes each side or until golden and tender.
  • Step 4 Arrange oranges, overlapping, over cake. Carefully add orange juice and cinnamon to pan (mixture may spatter). Cook, stirring, for 2 to 3 minutes or until sugar has dissolved. Bring to the boil. Boil without stirring for 3 minutes or until slightly thickened. Drizzle over orange slices. Serve.
