Ingredients

  • 400g dark chocolate, chopped (see notes)
  • 250g Philadelphia Original Spreadable Cream Cheese
  • 1 1/2 cups dessicated coconut, plus 1 tablespoon extra
  • 1/2 cup almond meal

Method

  • Step 1 Melt 80g of the chocolate in a small saucepan over low heat.
  • Step 2 Place the cream cheese, coconut, almond meal and melted chocolate in a food processor and process until combined. Chill for 10 minutes.
  • Step 3 Roll level tablespoon measures of cream cheese mixture into balls.
  • Step 4 Line an oven tray with baking paper. Heat remaining 320g chocolate over low heat until runny. Using a fork, dip a ball into the melted chocolate to coat. Gently tap the fork on the side of the pan to remove excess chocolate. Place on the prepared tray.
  • Step 5 Sprinkle with a little extra coconut if you like. Repeat with the remaining balls and chocolate (reheat the chocolate halfway through if it cools and thickens too much).
  • Step 6 Chill for 20 minutes or until chocolate is set.
