Ingredients

  • 100g dark chocolate, coarsely chopped
  • 125ml (1/2 cup) pouring cream
  • 30g unsalted butter
  • 100g (1 cup) almond meal
  • 75g (1/2 cup) self-raising flour, sifted
  • 100g (1/2 cup, firmly packed) dark brown sugar
  • 2 eggs, lightly whisked
  • 60ml (1/4 cup) fresh orange juice
  • 2 teaspoons finely grated orange rind
  • 2 teaspoons vanilla essence
  • 100g unsalted butter, extra, melted
  • 100g milk chocolate, coarsely grated
  • 250g ctn mascarpone
  • 2 teaspoons cocoa powder
  • 2 teaspoons pure icing sugar
  • Icing sugar, to dust

Method

  • Step 1 Preheat oven to 170°C. Stir the dark chocolate, cream and butter in a saucepan over medium heat for 3 minutes or until the chocolate melts and is smooth. Divide among four 250ml (1-cup) capacity ovenproof cups or ramekins.
  • Step 2 Combine almond meal, flour and sugar in a bowl. Make a well in the centre. Add egg, orange juice, orange rind, vanilla and extra butter. Use a large metal spoon to fold until almost combined. Fold in milk chocolate. Divide among the cups or ramekins. Place on a baking tray. Bake for 35-40 minutes or until crumbs cling to a skewer inserted into the centres.
  • Step 3 Meanwhile, gently stir the mascarpone in a bowl to soften. Combine the cocoa powder and icing sugar in a bowl. Fold into the mascarpone to create a swirled effect.
  • Step 4 Dust with icing sugar. Top with mascarpone mixture.
