Ingredients

  • 100g butter, chopped
  • 2 tablespoons glucose syrup
  • 395g can sweetened condensed milk
  • 1 1/3 cups firmly-packed brown sugar
  • 180g dark chocolate, finely chopped
  • 1 teaspoon peppermint essence
  • Icing sugar mixture, to decorate

Method

  • Step 1 Grease a 3cm-deep x 19cm square cake pan. Line base and sides with baking paper, with a 2cm overhang on all sides.
  • Step 2 Place butter, glucose syrup, condensed milk and sugar in a medium saucepan over medium heat. Cook, stirring, for 3 to 5 minutes or until sugar dissolves and mixture is smooth. Increase heat to medium-high. Cook, stirring constantly, for 10 to 15 minutes or until mixture is thick and becomes caramel in colour. Remove from heat.
  • Step 3 Quickly stir in dark chocolate and peppermint essence until melted and combined.
  • Step 4 Spread mixture into prepared pan. Refrigerate for 2 hours or until set. Cut into 3cm squares.
  • Step 5 Decorate with icing sugar.
