Ingredients

  • 1/3 cup raisins
  • 1 cup (150g) self-raising flour
  • 1/4 cup dark cocoa
  • 2/3 cup caster sugar
  • 1/3 cup milk
  • 1 egg, lightly beaten
  • 80g melted butter, cooled
  • 100g dark chocolate, roughly chopped
  • 1 1/4 cups (310ml) boiling water
  • 1/3 cup (80ml) rum
  • 1/2 cup caster sugar, extra
  • 1 tablespoon dark cocoa, extra

Method

  • Step 1 Preheat oven to 180°C. Scatter raisins into an 8 cup ovenproof dish. Sift flour and cocoa together. Add caster sugar and make a well in the centre.
  • Step 2 Add milk, egg and melted butter. Stir until just smooth. Stir in chocolate. Spoon the mixture over the raisins and smooth the surface.
  • Step 3 Whisk boiling water, rum, extra sugar and cocoa in a jug. Carefully pour the mixture over the back of a spoon onto the cake mixture. Place the dish on an oven tray and bake for 35-40 minutes. Serve immediately.
