Ingredients

  • 80g (1/2 cup) icing sugar mixture
  • 50g (1/3 cup) plain flour
  • 2 tablespoons cocoa powder
  • 50g (21/2 tablespoons) butter, melted
  • 1 egg white, at room temperature, lightly whisked
  • 250g (1 punnet) strawberries, hulled, sliced
  • 4 scoops vanilla ice-cream
  • Extra icing sugar mixture, to dust

Method

  • Step 1 Preheat oven to 170°C. Mark four 10cm-diameter circles each on 2 pieces of non-stick baking paper. Place on 2 large baking trays.
  • Step 2 Sift icing sugar, flour and cocoa together into a bowl. Add the butter and egg white, and use a wooden spoon to mix until smooth. Divide mixture among circles. Use the back of a spoon to spread evenly over each. Bake in preheated oven for 5-6 minutes or until just firm. Remove from oven and set aside for 10 minutes.
  • Step 3 Place 1 wafer on each serving plate. Arrange the strawberries over the wafers. Top each with a scoop of ice-cream. Place the remaining wafers on top and dust with the icing sugar.
