Ingredients

  • 1 cup (220g) caster sugar
  • 1/2 teaspoon ground star anise
  • 1 vanilla bean
  • 3 navel oranges
  • 3 pink grapefruit
  • Natural yoghurt, to serve

Method

  • Step 1 Place the sugar, star anise and 2 cups (500ml) of water in a large saucepan. Use a small knife to split the vanilla bean lengthways, without cutting all the way through. Scrape the seeds into the pan and add the bean. Stir over a low heat until the sugar dissolves. Increase heat to high and bring to the boil. Boil 5 minutes.
  • Step 2 Meanwhile, use a small sharp knife to cut the skin off the oranges and grapefruit. Cut the fruit into 1cm-thick round slices.
  • Step 3 Add the fruit slices to the pan and remove from the heat. Stir gently to coat in the syrup. Cover and set aside for 5 minutes.
  • Step 4 Divide the fruit among serving plates. Spoon over a little over the syrup and a dollop of yoghurt to serve.
