Ingredients

  • 12 slices wholegrain or rye bread
  • 12 rashers rindless, shortcut bacon
  • Olive oil spray
  • 1/2 cup whole egg mayonnaise
  • 12 cos lettuce leaves
  • 320g sliced turkey breast
  • 4 ripe tomatoes, sliced
  • Salt & freshly ground pepper
  • Hot chips, to serve

Method

  • Step 1 Preheat a grill tray on medium. Place half the bread under grill and cook for 1-2 minutes each side or until lightly toasted. Repeat with remaining bread.
  • Step 2 Spray both sides of bacon lightly with oil. Place under grill and cook for 2-3 minutes each side or until slightly crisp. Drain on some paper towel.
  • Step 3 Spread 8 of the slices of toast with the mayonnaise. Arrange half of the lettuce, turkey and tomatoes over 4 slices. Season with salt and pepper.
  • Step 4 Top with a second slice of toast with mayonnaise. Then remaining lettuce, bacon and tomato. Season well with salt and pepper. Top with remaining pieces of toast. Use toothpicks to secure. Cut each sandwich in half. Serve with chips.
