  • 1 1/2 cups thickened cream
  • 100g 70% cocoa dark chocolate, chopped
  • 100g red glace cherries
  • 1 litre cookies and cream ice-cream
  • 2 tablespoons crushed peanuts
  • Mini Oreo biscuits, roughly broken, to serve

Method

  • Step 1 Place sugar, golden syrup, butter and 1/2 cup cream in a small saucepan over medium heat. Cook, stirring for 3 to 4 minutes or until mixture comes to the boil. Boil for 1 minute, Remove from heat. Add chocolate. Stir until chocolate has melted and mixture is smooth and glossy. Set aside to cool.
  • Step 2 Using an electric mixer, beat remaining cream until soft peaks form. Halve cherries.
  • Step 3 Divide scoops of ice-cream between eight serving dishes. Top with sauce, cream, peanuts, cherries and biscuits. Serve immediately.
