Ingredients

  • 1 cup (200g) couscous
  • 1/2 red onion, chopped
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground coriander
  • 2 tablespoons blanched almonds, toasted, chopped

Method

  • Step 1 Preheat oven to 110°C.
  • Step 2 In a casserole, toss couscous, onion, oil, spices, pepper and salt. Stir in 400ml boiling water, cover and bake for 10 minutes.
  • Step 3 Fluff with a fork, scatter with nuts and serve with harira.
