Ingredients

  • 1 cup thickened cream
  • 1/2 cup milk
  • 4 garlic cloves, crushed
  • 1 tablespoon fresh thyme leaves
  • 850g celeriac, trimmed, peeled, very thinly sliced
  • 2 (300g) desiree potatoes, peeled, very thinly sliced
  • 150g blue shropshire cheese, crumbled (see note)

Method

  • Step 1 Preheat oven to 200°C/180°C fan-forced. Grease a 6cm-deep, 16cm x 24cm (8 cup-capacity) oval baking dish.
  • Step 2 Combine cream, milk, garlic and thyme in large jug. Season with salt and pepper. Layer celeriac, potato and 3/4 of cheese in prepared dish. Pour over cream mixture. Lightly shake dish allowing cream mixture to settle between layers. Cover tightly with foil. Bake for 30 minutes.
  • Step 3 Remove foil. Top with remaining cheese. Bake for a further 30 to 40 minutes or until celeriac is tender. Stand for 10 minutes. Serve.
