  • 2 tablespoons cocoa powder, sifted
  • 1 teaspoon vanilla bean paste
  • 4 cups low-fat milk
  • 1/4 cup caster sugar
  • 2 tablespoons flaked almonds, toasted

Method

  • Step 1 Place rice in a heavy-based saucepan. Whisk cocoa, vanilla and 1/4 cup milk together in a large bowl. Add sugar and remaining milk. Whisk until well combined.
  • Step 2 Add milk mixture to rice. Bring to the boil over medium heat, stirring often. Reduce heat to low. Cover. Cook, stirring occasionally, for 40 to 50 minutes or until rice is tender. Serve topped with almonds.
