Ingredients

  • 1/2 cup caster sugar
  • 20g butter
  • 1/3 cup orange juice
  • 1 tablespoon orange liqueur
  • 1 tablespoon brandy
  • 375g strawberries, hulled, halved
  • 4 frozen crepes, thawed
  • Vanilla ice-cream, to serve

Method

  • Step 1 Place sugar and 1 tablespoon cold water in a large frying pan over low heat. Cook, stirring, for 2 minutes or until sugar has dissolved. Add butter. Increase heat to high. Cook for 4 minutes or until golden brown. Add orange juice. Cook, stirring, for 2 minutes or until smooth. Add orange liquer and brandy. Stir to combine. Add strawberries. Cook for 30 seconds or until heated through. Using a slotted spoon, transfer strawberries to a bowl.
  • Step 2 Dip 1 crepe into syrup mixture in frying pan to lightly coat. Place on a large plate. Top with a quarter of the strawberries. Fold into quarters. Place on a serving plate. Repeat with remaining crepes, syrup mixture and strawberries.
  • Step 3 Serve crepes with ice-cream and drizzled with any remaining syrup.
