Ingredients

  • 1kg chat (small coliban) potatoes, quartered
  • 1 tablespoon extra light olive oil
  • 1 tablespoon finely grated lemon rind
  • 1 garlic clove, crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Italian beef rissoles with fresh tomato salsa (see previous recipe), to serve

Method

  • Step 1 Preheat oven to 220°C. Cook the potatoes in a large saucepan of salted boiling water for 8 minutes or until tender. Drain well.
  • Step 2 Place the potatoes, oil, lemon rind, garlic, salt and pepper in a large roasting pan and gently toss to combine. Roast in oven for 20 minutes or until golden brown and crisp. Serve with the Italian beef rissoles with fresh tomato salsa.
