Ingredients

  • 1/3 cup (75g) brown sugar
  • 1 bunch rhubarb, trimmed and cut into 3-4cm pieces, rinsed
  • 1 1/2 teaspoons vanilla extract
  • 125g smooth ricotta
  • 4 square-shaped crumpets

Method

  • Step 1 Place sugar and 1/4 cup (60ml) water in a saucepan over medium low heat. Stir until sugar dissolves. Increase heat to medium, simmer for 3-4 minutes or until syrup thickens. Add rhubarb, cook, stirring for 6-8 minutes or until rhubarb is tender and just starting to fall apart. Stir through vanilla.
  • Step 2 Meanwhile, place crumpets in toaster or oven grill and toast until golden brown.
  • Step 3 Serve crumpets topped with rhubarb and ricotta.
