Ingredients

  • 2 3/4 cups plain flour, sifted
  • 1/2 cup icing sugar
  • 250g butter, chilled, chopped
  • 5 eggs
  • 1 cup caster sugar
  • 1 teaspoon vanilla essence
  • 250g packet dark choc bits
  • 3/4 cup pecan nuts, roughly chopped
  • 1 tablespoon cocoa powder

Method

  • Step 1 Preheat oven to 180°C. Grease and line a 3cm deep, 24cm x 29.5cm (base) lamington pan.
  • Step 2 Process 2 cups of flour, icing sugar and half the butter until mixture resembles breadcrumbs. Add 1 egg. Process until dough comes together.
  • Step 3 Press dough into base of prepared pan. Refrigerate for 15 minutes, or until firm.
  • Step 4 Melt remaining butter. Beat remaining eggs, caster sugar and vanilla until light and fluffy. Fold through remaining flour. Stir in butter, choc bits and nuts. Spread over dough.
  • Step 5 Bake for 40 to 45 minutes, or until light golden and firm to the touch. Allow to cool completely in pan.
  • Step 6 Dust with cocoa. Cut into squares. Serve.
