Ingredients

  • 6 (180g each) sebago potatoes
  • 2 tablespoons extra virgin olive oil
  • 4 shortcut bacon rashers, trimmed, finely chopped
  • 1 small leek, white part only, finely chopped
  • 2 tablespoons sour cream
  • 20g butter, chopped
  • 1/2 cup grated tasty cheese
  • Chopped fresh chives, to serve

Method

  • Step 1 Preheat oven to 180C/160C fan-forced. Place potatoes on a baking tray. Drizzle with half the oil. Season with salt and pepper. Bake for 1 hour or until tender. Stand for 15 minutes to cool slightly. Increase oven to 220C/200C fan-forced.
  • Step 2 Meanwhile, heat remaining oil in a frying pan over medium-high heat. Add bacon and leek. Cook for 10 minutes or until golden. Set aside.
  • Step 3 Cut 5mm from the top of each potato and discard. Leaving a 1cm border, scoop out centres. Place potato flesh in a bowl. Add sour cream and butter. Mash with a fork until almost smooth. Add 3⁄4 of the bacon mixture. Season with salt and pepper. Stir to combine. Spoon mixture into potato shells. Sprinkle with cheese and reserved bacon mixture. Bake for 20 minutes or until golden. Sprinkle with chives. Serve.
