Ingredients

  • 1/2 cup milk
  • 100g butter, chopped
  • 1 cup self-raising flour
  • 1/3 cup cocoa powder
  • 1/2 cup caster sugar
  • 1 egg, lightly beaten
  • 1/4 cup shredded coconut
  • 1/4 cup NESTLÉ BAKERS' CHOICE Milk CHOC BITS
  • 180g white chocolate, roughly chopped
  • 1/2 cup firmly packed brown sugar
  • 1 3/4 cups boiling water
  • Extra cocoa powder, to serve
  • Vanilla ice-cream, to serve

Method

  • Step 1 Place milk and butter in a 6cm-deep, 8 cup-capacity heatproof microwave-safe dish. Microwave on HIGH (100%) for 1 minute or until butter has melted.
  • Step 2 Sift flour and half the cocoa over the butter mixture. Add caster sugar. Whisk to combine. Stir in egg and coconut. Wipe edges of the dish clean. Sprinkle choc bits and white chocolate evenly over the batter. Sprinkle with brown sugar and remaining cocoa. Pour boiling water over the back of a large metal spoon to cover batter.
  • Step 3 Microwave, uncovered, on MEDIUM (50%) for 10 to 12 minutes or until a skewer inserted into edge of pudding comes out clean. Stand for 2 minutes. Dust with extra cocoa powder and serve with vanilla ice-cream.
