Ingredients

  • 8 eggs, at room temperature
  • 100g streaky bacon rashers (see note), finely chopped
  • 100g piece crusty bread, crust removed, finely chopped
  • 1 tablespoon extra virgin olive oil
  • 3 bunches asparagus, trimmed

Method

  • Step 1 Place eggs in a medium saucepan. Cover with cold water. Cover and bring to the boil over high heat. Reduce heat to medium. Simmer gently for 3 minutes. Remove pan from heat. Using a slotted spoon, transfer eggs to egg cups.
  • Step 2 Meanwhile, heat a large non-stick frying pan over medium-high heat. Cook bacon, stirring, for 3 to 4 minutes or until just starting to brown. Add bread. Cook, stirring, for 2 to 3 minutes or until golden and crisp. Transfer to a bowl. Season with pepper.
  • Step 3 Wipe pan clean. Add oil. Heat over medium-high heat. Cook asparagus, turning, for 2 minutes or until lightly charred and just tender.
  • Step 4 Using a spoon, carefully remove tops from eggs. Serve eggs with asparagus dippers, sprinkled with bacon crumbs.
