Ingredients

  • 2 bagels, split
  • Butter, to spread
  • 2 teaspoons extra virgin olive oil
  • 4 bacon shortcut, halved
  • 2 eggs
  • 50g (1/2 cup) coarsely grated tasty cheese
  • 1 tomatoes, sliced
  • 1/2 avocado, sliced
  • Rocket leaves, to serve
  • Sriracha sauce, to drizzle

Method

  • Step 1 Use a 5cm-cutter to enlarge the hole in the top half of the bagel. Butter the cut sides of the bagels.
  • Step 2 Heat the oil in a large non-stick frying pan over medium-high heat. Cook the bacon, turning, for 4 minutes or until crisp. Set aside. Add the bagel to the pan, cut sides down. Cook for 1-2 minutes or until lightly toasted. Crack an egg into the top half (the white will run out, but don't worry). Turn bottom half over. Sprinkle each with 1/4 cup cheese. Cover pan and cook over low heat until the egg is set.
  • Step 3 Divide the bacon, tomato and avocado on each bagel base. Top with rocket and drizzle with sriracha sauce. Cover with bagel top and drizzle with more sriracha.
