Ingredients

  • 1 teaspoon dry yeast
  • Pinch of sugar
  • 300g (2 cups) plain flour
  • 1 teaspoon table salt
  • 1 tablespoon extra virgin olive oil, plus extra, to grease
  • Broccolini, to decorate
  • Halved grape tomatoes, to decorate
  • Sliced capsicum, to decorate
  • Sliced red onion, to decorate
  • Fresh herbs, to decorate

Method

  • Step 1 Place 250ml (1 cup) lukewarm water in a jug. Add the yeast and sugar. Stir to combine. Set aside for 5 minutes or until frothy.
  • Step 2 Combine the flour and salt in a large bowl. Make a well in the centre. Pour in the yeast mixture and use a wooden spoon to stir for 2 minutes or until a sticky dough comes together. Lightly grease a 20 x 30cm rimmed baking tray with extra olive oil. Pile the dough onto the centre of the prepared tray. Cover loosely with baking paper and set aside in a warm place for 30 minutes to rise.
  • Step 3 Drizzle olive oil over the dough and use your fingertips to spread the dough out to fill the tray, making sure the surface is coated with oil. Set aside for another 30 minutes.
  • Step 4 Preheat oven to 200C/180C fan forced. Decorate the dough with vegetables and herbs. Bake for 25 minutes or until golden brown. Season and serve.
