Ingredients

  • 170g (3/4 cup) French green lentils
  • 200g sugar snap peas, trimmed
  • 140g (1 1/2 cups) frozen green peas or fresh green peas
  • 150g snow peas, trimmed, halved
  • 1/2 small red onion, finely chopped
  • 2 celery sticks, finely chopped, plus inner leaves
  • 1/2 cup fresh mint leaves, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 2 teaspoons wholegrain mustard
  • 1 teaspoon honey
  • 50g marinated feta, drained, crumbled

Method

  • Step 1 Cook the lentils in a large saucepan of boiling water for 20-25 minutes or until just tender. Drain and refresh under cold running water. Drain.
  • Step 2 Meanwhile, steam the sugar snap peas, peas and snow peas in a steamer over a saucepan of simmering water. Refresh under cold running water. Drain. Slice the sugar snap and snow peas horizontally.
  • Step 3 Combine the lentils, steamed vegetables, onion, celery, celery leaves and mint in a large bowl. Season.
  • Step 4 Whisk together the olive oil, vinegar, mustard and honey in a small bowl. Add to the salad and gently toss to combine. Serve topped with the crumbled feta.
