Ingredients

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon sweet paprika
  • 1/2 cup fresh continental parsley leaves
  • 1/2 cup fresh coriander leaves
  • 2 small fresh red chillies, deseeded, coarsely chopped
  • 2 garlic cloves, peeled, coarsely chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice

Method

  • Step 1 Place cumin, ground coriander and paprika in a frying pan over low heat. Cook, stirring, for 1 minute or until aromatic.
  • Step 2 Place parsley, fresh coriander, chillies, garlic and spice mixture in the bowl of a food processor and process until herbs are coarsely chopped. Add oil and lemon juice and process until well combined and herbs are finely chopped.
