Ingredients

  • 4 stems lemon grass
  • 2 kiwifruit, peeled, each cut into 8 pieces
  • 4 freestone peaches, quartered, stones removed
  • 8 strawberries, washed, hulled, halved
  • 2 tablespoons brown sugar
  • 2 tablespoons shredded coconut
  • Vanilla yoghurt, to serve

Method

  • Step 1 Cut the lemon-grass stems into 20cm lengths, then cut in half lengthways. Remove the tough outer layers and trim one end of each stem to make a point (this makes skewering the fruit easier).
  • Step 2 Thread the kiwifruit, peach and strawberry among the skewers.
  • Step 3 Preheat grill on high. Place the skewers, in a single layer, on a baking tray. Sprinkle with brown sugar and coconut. Cook under grill for 30 seconds or until the sugar caramelises and the coconut is toasted. Serve immediately with vanilla yoghurt.
