Ingredients

  • 4 eggs
  • 1 teaspoon garam masala
  • 20g butter
  • 1/2 cup plain yoghurt
  • 1 small Lebanese cucumber, finely chopped
  • 2 tablespoons finely chopped fresh mint
  • 1 1/2 cups baby spinach

Method

  • Step 1 Beat eggs, 2 tablespoons cold water and garam masala in a bowl until combined.
  • Step 2 Melt half the butter in a frying pan over medium-high heat. Pour half of egg mixture into pan. Tilt pan so egg covers base. Cook for 1 to 2 minutes or until set. Slide omelette onto plate. Cover to keep warm. Repeat with remaining butter and egg mixture.
  • Step 3 Meanwhile, combine yoghurt, cucumber and mint in a bowl.
  • Step 4 Top omelettes with spinach. Roll up tightly. Cut in half. Season with pepper. Serve with yoghurt mixture.
