Ingredients

  • 1.2kg Ruby Lou potatoes, peeled, coarsely chopped (see note)
  • 2 garlic cloves, peeled
  • 80g butter, chopped
  • 250ml (1 cup) pouring cream
  • 1 tablespoon finely chopped fresh chives
  • Extra butter, to serve

Method

  • Step 1 Place the potato and garlic in a saucepan and cover with cold water. Bring to the boil over medium heat and cook for 25 minutes or until tender. Drain and return to the pan. Cook over low heat for 2-3 minutes or until dry. use a potato masher or fork to mash until smooth.
  • Step 2 Heat the butter and cream in a saucepan over low heat for 3 minutes or until the butter melts and the cream is hot. Gradually add the cream mixture to potato mixture, beating with a wooden spoon until smooth. season with salt and pepper. stir in the chives. Transfer to a bowl. Top with a dollop of butter and season with pepper.
