Ingredients

  • 30g butter, chopped
  • 1 tablespoon extra virgin olive oil
  • 4 garlic cloves, thinly sliced
  • 600g mixed mushrooms, sliced
  • 1/3 cup chopped fresh flat-leaf parsley
  • 2 tablespoons chopped fresh chives
  • 2 teaspoons lemon zest

Method

  • Step 1 Heat butter and oil in a large frying pan over medium-high heat. Add garlic. Cook, stirring, for 1 minute or until fragrant.
  • Step 2 Add mushrooms. Cook, stirring occasionally, for 4 to 5 minutes or until mushrooms are golden and tender. Add parsley, chives and 1/2 of the lemon zest. Toss gently to combine. Season well with salt and pepper.
  • Step 3 Serve mushrooms sprinkled with remaining lemon zest.
