Ingredients

  • 2 1/2 cups plain flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • Pinch of ground cloves
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon bicarbonate of soda
  • 125g unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup molasses
  • 1 egg
  • 1 cup icing sugar mixture

Method

  • Step 1 Preheat oven to 180C/160C fan-forced. Line two baking trays with baking paper.
  • Step 2 Sift flour, spices and bicarb in a medium bowl. Set aside. Using an electric mixer, beat butter, brown sugar and molasses for 3 to 4 minutes or until fluffy. Add egg. Beat to combine. Stir in flour mixture until combined.
  • Step 3 Roll level tablespoons of dough into balls. Arrange balls, 5cm apart, on prepared trays. Bake for 12 to 15 minutes or until cookies are golden and firm to touch (cookies will crack slightly). Cool on trays for 10 minutes.
  • Step 4 Place icing sugar in a bowl. Working in batches, gently toss slightly warm cookies in icing sugar until well coated. Shake off excess sugar and transfer to a wire rack set over a baking tray to cool completely. Serve (see notes).
