Ingredients

  • 2 stalks lemongrass (white part only), sliced
  • 6cm piece fresh ginger, sliced
  • 3/4 cup caster sugar
  • Lemongrass stalks (see note), to serve
  • Ice cubes, to serve

Method

  • Step 1 Place lemongrass, ginger and sugar in a saucepan. Add 8 cups cold water. Bring to the boil over high heat. Reduce heat to low. Simmer for 15 minutes. Set aside for 30 minutes to cool. Transfer mixture to an airtight container. Refrigerate until chilled.
  • Step 2 Strain lemongrass mixture through a fine sieve in a large jug. Discard solids. Place ice cubes and lemongrass stalks, if using, in glasses. Top up with lemongrass mixture. Serve.
