Ingredients

  • 310g madeira packet cake mix
  • 2 eggs
  • 3/4 cup milk
  • 2 teaspoons ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1 1/2 tablespoons brown sugar
  • 1 small packham pear, cored, thinly sliced
  • Double cream, to serve

Method

  • Step 1 Preheat oven to 180°C/160°C fan-forced. Grease a 6cm-deep, 12cm x 20.5cm (base) loaf pan. Line base and sides with baking paper, allowing 2cm overhang at long ends.
  • Step 2 Place cake mix in a large bowl. Add eggs, milk, ginger, cinnamon and cloves. Using an electric mixer, beat on low speed for 30 seconds or until just combined. Increase speed to medium. Beat for 4 minutes or until mixture is pale and creamy.
  • Step 3 Sprinkle sugar over base of prepared pan. Arrange pears, overlapping slightly, over sugar. Spoon over cake mixture. Smooth top. Bake for 50 minutes or until a skewer inserted in the centre comes out clean. Cool in pan for 5 minutes. Turn out onto a plate. Serve with cream.
