Ingredients

  • 125g butter, softened
  • 1/2 cup caster sugar
  • 2 eggs
  • 2 cups self-raising flour
  • 1/3 cup desiccated coconut
  • 1/2 cup milk
  • Sprinkles, to decorate

Quick strawberry jam

  • 250g strawberries, hulled, finely chopped
  • 2 tablespoons caster sugar
  • 1 teaspoon vanilla extract

Icing

  • 2 cups icing sugar mixture
  • Pink food colouring

Method

  • Step 1 Make Quick Strawberry Jam: Place strawberry, sugar and vanilla in a small saucepan over medium-high heat. Cook, stirring, for 4 to 5 minutes or until sugar dissolves. Bring to the boil. Reduce heat to medium-low. Simmer, stirring occasionally, for 10 minutes or until mixture thickens and strawberry is pulpy. Remove from heat. Set aside for 30 minutes to cool.
  • Step 2 Preheat oven to 180°C/160°C fan-forced. Grease a 6.5cm-deep, 10.5cm x 21cm loaf pan, extending paper 3cm above all edges.
  • Step 3 Using an electric mixer, beat butter and sugar for 5 minutes or until light and fluffy. Add eggs, 1 at a time, beating until just combined. Add flour, coconut and milk. Beat for 30 seconds or until well combined.
  • Step 4 Spoon 2/3 of the mixture into pan. Level top. Spoon jam over top of batter, leaving a 1.5cm border. Drop small spoonfuls of remaining batter over top of jam. Spread gently to cover. Bake for 45 minutes or until golden and top is firm to touch. Stand in pan for 5 minutes. Transfer to a wire rack to cool completely.
  • Step 5 Make Icing: Whisk icing sugar and 1 tablespoon hot water together until smooth and combined, adding an extra 1 tablespoon hot water if needed. Using food colouring, tint pale pink. Spread icing over top of cake. Decorate with sprinkles. Set aside for 2 hours or until set. Serve.
