Ingredients

  • 150g orange sweet potato, peeled, grated
  • 2 1/2 cups gluten-free white bread mix
  • 1 teaspoon salt
  • 1 tablespoon roughly chopped fresh thyme leaves
  • 1 tablespoon extra virgin olive oil

Method

  • Step 1 Place sweet potato in a microwave-safe bowl. Cover with plastic wrap. Microwave on HIGH (100%) for 3 to 4 minutes or until just tender. Remove plastic wrap. Cool for 10 minutes.
  • Step 2 Combine the bread mix, salt, thyme leaves and cooled sweet potato in a large bowl. Season with pepper. Add 1 2/3 cups water. Whisk until smooth and combined.
  • Step 3 Heat a large frying pan over medium heat. Brush pan with a little of the oil (see notes). Spoon 1/3 cup batter into the pan. Using a palette knife, spread batter to form a 20cm round. Cook for 2 minutes or until golden brown. Turn round over. Cook for a further 1 minute or until cooked through. Wrap in a clean tea towel to cool. Repeat with remaining batter to make 8 wraps (see notes).
