Ingredients

  • Olive oil, to grease
  • 1 x 600g pkt fresh gnocchi
  • 1 bunch English spinach, trimmed, leaves washed, dried
  • 200g vegetarian cheese (Mainland brand), coarsely grated
  • 1 tablespoon plain flour
  • 250ml (1 cup) milk
  • Salt & freshly ground black pepper

Method

  • Step 1 Preheat oven to 200°C. Brush a 1L (4-cup) capacity baking dish with oil to lightly grease. Cook gnocchi in a large saucepan of boiling water following packet directions or until they rise to the surface (approx 5 min). Drain.
  • Step 2 Meanwhile, place the spinach in a medium heatproof bowl. Cover with hot water and set aside for 3 minutes or until just wilted (see microwave tip). Drain well.
  • Step 3 Combine cheese and flour in a medium saucepan. Gradually stir in the milk. Place over medium heat and cook, stirring, for 3 minutes or until the cheese melts and the sauce thickens.
  • Step 4 Place spinach in the prepared dish. Spoon over the gnocchi and pour over cheese sauce. Bake in preheated oven for 10 minutes or until golden brown. Season with salt and pepper.
