Ingredients

  • 500g packet fresh gnocchi
  • 60g butter
  • 1 medium head broccoli, cut into small florets
  • Juice of 1/2 lemon, plus extra wedges to serve
  • 1/2 cup grated parmesan (or vegetarian hard cheese)

Method

  • Step 1 Blanch gnocchi in a large saucepan of boiling water. Drain and refresh in iced water.
  • Step 2 Heat half the butter in a large frying pan on high. Cook gnocchi for 3-4 minutes stirring. Reduce heat to medium.
  • Step 3 Heat remaining butter in pan and add the broccoli. Cook, stirring, for 4-5 minutes.
  • Step 4 Add lemon juice and half the parmesan. Season to taste. Serve topped with remaining parmesan and with a lemon wedge on the side. If you like, you could also sprinkle over a little chopped parsley.
