Ingredients

  • 1 1/2 cups (270g) red grapes, halved
  • 1 1/2 cups (270g) green grapes, halved lengthways
  • 1/2 cup (110g) caster sugar
  • 1 tablespoon cornflour
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 40g butter, melted
  • 1/4 cup (60ml) buttermilk
  • 1 Coles Australian Free Range Egg, lightly whisked
  • 11/2 cups (225g) self-raising flour
  • Melted butter, extra, to brush
  • 1 teaspoon caster sugar, extra
  • Coles Vanilla Flavoured Yoghurt, to serve
  • Coles Orange Fruit Drink, to serve

Method

  • Step 1 Preheat oven to 180C. Grease and line an 18cm x 27cm slice pan with baking paper.
  • Step 2 Place the combined grape, half the sugar, cornflour, lemon juice and cinnamon in a medium bowl. Stir until grape is well coated in the sugar mixture.
  • Step 3 Combine the butter, buttermilk, egg and remaining sugar in a large bowl until well combined. Add the flour and stir until a soft dough forms.
  • Step 4 Divide dough into 2 portions. Roll 1 dough portion out on a piece of baking paper to a 21cm x 30cm rectangle. Press into the base and halfway up the sides of the prepared pan.
  • Step 5 Spoon the grape mixture over the slice base in the pan. Roll out the remaining dough portion on a piece of baking paper to a 19cm x 28cm rectangle. Use a 1cm pastry cutter to cut discs from pastry and discard. Carefully place dough rectangle over grape mixture in the pan and tuck in the edges. Brush with extra melted butter and sprinkle with extra sugar.
  • Step 6 Bake for 30 mins or until golden and puffed. Set aside in the pan to cool. Cut into pieces. Serve with yoghurt and orange drink.
