Ingredients

  • 200g spaghetti, broken into 5cm lengths
  • 250g green beans, trimmed
  • 250g snow peas, trimmed
  • 1 medium zucchini, grated
  • 2 tablespoons drained baby capers
  • 1/2 small red onion, finely chopped
  • 2 tablespoons chopped fresh dill
  • 1/2 cup French dressing
  • 1 medium avocado, finely chopped

Method

  • Step 1 Cook pasta in a large saucepan of boiling, salted water, following packet directions until tender. Drain. Rinse under cold water. Drain well.
  • Step 2 Meanwhile, cook beans and snow peas in a small saucepan of boiling water for 2 minutes or until just tender. Rinse under cold water. Drain. Cut into 3cm lengths.
  • Step 3 Place bean mixture, zucchini, capers, onion, dill and cooled pasta in a large bowl. Season with salt and pepper. Add dressing. Toss to combine. Add avocado. Toss gently. Serve.
