Ingredients

  • 500g broad beans
  • 1 avocado
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 garlic clove, crushed
  • 2 anchovies
  • 2 teaspoons finely chopped tarragon
  • Flatbread, to serve
  • Cherry tomatoes, to serve
  • Baby carrots, to serve

Method

  • Step 1 Place beans in a heatproof bowl and cover with boiling water. Stand for 2 minutes. Drain. Discard skin.
  • Step 2 Using a food processor, process the beans, avocado, garlic, oil, juice, anchovies and tarragon until smooth. Season. Transfer to a bowl. Chill until ready to serve.
  • Step 3 Serve with flatbread, tomatoes and baby carrots.
