Ingredients

  • 200g snow peas, ends trimmed
  • 200g green beans, ends trimmed, halved diagonally
  • 1/3 cup (45g) dried cranberries
  • 1 lemon, zested, juiced
  • 100g marinated fetta, drained reserving 2 tbs oil
  • 2 teaspoons honey
  • 2 teaspoons Dijon mustard
  • 1/3 cup (25g) Coles Australian Flaked Almonds, toasted

Method

  • Step 1 Cook the snow peas and beans in a saucepan of boiling water for 2-3 mins or until bright green and tender crisp. Refresh under cold water. Drain well.
  • Step 2 Combine cranberries and lemon juice in a bowl. Set aside for 5 mins to soften. Add reserved oil, honey and mustard. Whisk until well combined. Season. Add to the bean mixture. Toss to coat.
  • Step 3 Place the bean mixture on a serving platter. Sprinkle with almond, fetta and lemon zest. Serve immediately.
