Ingredients

  • 8 chicken sausages
  • 2 large red apples, cored, cut into thin wedges
  • 150g baby spinach
  • 1 Lebanese cucumber, cut into ribbons (see note)
  • 1/2 small red onion, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon wholegrain mustard
  • Crusty bread, to serve

Method

  • Step 1 Heat a greased barbecue hotplate and chargrill on medium-high heat. Cook sausages on hotplate for 5 to 6 minutes or until cooked through. Slice thickly. Cover.
  • Step 2 Cook apple slices on chargrill for 1 to 2 minutes each side or until lightly charred.
  • Step 3 Combine sausage, apple, spinach, cucumber and onion in a large bowl. Place oil, vinegar and mustard in a small bowl. Whisk until combined. Season with salt and pepper. Add dressing to salad. Toss gently to combine. Serve salad with bread.
