Ingredients

  • 380g (2 cups) couscous
  • 20g butter
  • 500ml (2 cups) boiling water
  • 1 red onion, halved, finely chopped
  • 1/3 cup firmly packed coarsely chopped fresh continental parsley
  • 2 teaspoons finely grated lemon rind
  • Pinch of salt
  • 4 (about 160g each, 2cm thick) salmon fillets
  • 125g butter, extra, cubed
  • 85g (1/2 cup) green olives, pitted, finely chopped
  • 1 garlic clove, crushed
  • Lemon wedges, to serve

Method

  • Step 1 Place the couscous and butter in a medium heatproof bowl and pour over the boiling water while stirring with a fork. Cover and set aside for 5 minutes or until all the liquid is absorbed. Use a fork to separate the grains. Add the onion, parsley, lemon rind and salt and stir to combine.
  • Step 2 Meanwhile, preheat a chargrill on high. Add the salmon and cook for 3 minutes each side for medium or until cooked to your liking. Remove from heat and cover with aluminium foil to keep warm.
  • Step 3 Melt the extra butter in a small saucepan over medium heat until foaming. Remove from heat and stir in the olive and garlic until combined.
  • Step 4 Spoon the couscous among serving plates. Top with the salmon and spoon over the green-olive butter. Serve immediately with lemon wedges, if desired.
