Ingredients

  • 175g fresh white breadcrumbs
  • 25g self-raising flour
  • 85g caster sugar
  • 125g good-quality strawberry jam, warmed
  • 1 teaspoon vanilla extract
  • 3 eggs, lightly whisked
  • 125g unsalted butter, melted
  • 1 teaspoon bicarbonate of soda
  • Thick cream, to serve

Method

  • Step 1 Butter a 1.2-litre pudding basin.
  • Step 2 Combine breadcrumbs, flour and sugar in a large bowl. Add jam, vanilla, eggs and butter, then stir to combine.
  • Step 3 Dissolve soda in 1 tablespoon warm water, stir into mixture, then pour into basin. Make a pleat in centre of a sheet of baking paper (to allow for expansion) and use to cover pudding. Secure with string, then cover with foil. Place in a saucepan, add water to come halfway up sides of the basin, then bring to boil, cover, reduce heat to low and steam for 2 hours. Remove and set aside for 5 minutes. Turn out and serve with cream.
