Ingredients

  • 2 eggs, lightly whisked
  • 1 cup (150g) self-raising flour
  • 1/2 cup (125ml) milk
  • 1 cup chopped ham
  • 1 1/2 cups (150g) fresh peas or frozen peas
  • 1 tablespoon olive oil
  • Mixed salad leaves, to serve

Avocado and chilli salsa

  • 1 ripe avocado, finely chopped
  • 1 ripe tomato, seeded, finely chopped
  • 1 long green chilli, seeded, finely chopped
  • 1/2 red onion, finely chopped
  • 1 tablespoon lime juice

Method

  • Step 1 Combine eggs and flour in a bowl. Gradually add milk; whisk until a smooth batter forms. Season with salt and pepper. Add ham and peas and stir to combine.
  • Step 2 Heat a little of the oil in a large frying pan over medium heat. Spoon four 1/4-cupfuls of batter into pan, allowing room for spreading. Cook for 2-3 minutes or until golden underneath and bubbles appear on the surface. Turn and cook for a further 1-2 minutes or until cooked through. Transfer to a plate; cover with foil. Repeat with remaining batter and oil in another batch.
  • Step 3 To make salsa, combine all ingredients in a medium bowl. Taste and season.
  • Step 4 Place fritters on serving plates. Top with salsa; serve immediately with mixed salad.
