Ingredients

  • 2 chicken breast fillets
  • 150g Primo English Ham
  • 4 pineapple thins
  • 1 tablespoon maple syrup
  • 4 round brioche buns
  • 8 Colby cheese slices
  • Lettuce leaves, to serve
  • 2 tomatoes, sliced
  • Garlic aioli, to serve

Method

  • Step 1 Heat barbecue grill plate or chargrill pan. Cut the chicken fillets in half horizontally. Season with salt and pepper.
  • Step 2 Lay the ham and pineapple slices on a tray. Brush with maple syrup. Lightly spray the grill with oil. Cook chicken for 2-3 minutes each side or until golden and cooked through. Place on a clean tray, cover and keep warm.
  • Step 3 Cook ham and pineapple slices for 1-2 minutes each side until lightly golden. Split buns in half and toast until golden. Place the base of each bun onto a serving plate. Top with a slice of cheese, lettuce, another cheese slice, chicken, ham, pineapple, tomato and aioli. Top with remaining buns, serve.
