Ingredients

  • 1 teaspoon oil
  • 500g lean pork mince
  • 1 celery stick, thinly sliced
  • 2-4 teaspoons korma curry paste, to taste
  • 125g bought sliced mushrooms
  • 400g Coles Supreme Vegetable Mix
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 250g packet zucchini noodles
  • Fresh coriander leaves, to serve

Method

  • Step 1 Heat oil in a large frying pan over medium-high heat. Add pork. Cook, stirring to break up any lumps, for 8 minutes or until browned. Add celery and curry paste. Stir-fry for 1 minute. Add the mushrooms. Stir-fry for 1 minute.
  • Step 2 Add the vegetable mix. Stir-fry for 2 minutes or until almost tender. Add oyster and soy sauces. Toss until well combined.
  • Step 3 Add zucchini. Gently stir-fry for 1 minute. Scatter with coriander. Serve.
