Ingredients

  • 1 red onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 long fresh green chilli, finely chopped, plus extra, thinly sliced, to serve
  • 400g can no-added-salt black beans, rinsed, drained
  • 2 large roma tomatoes, diced
  • 150g cooked skinless chicken breast, shredded
  • 4 x 45g wholegrain wraps
  • 60g mixed salad leaves
  • 80g (1/3 cup) natural yoghurt
  • Lime wedges, to serve

Method

  • Step 1 Lightly spray a large saucepan with oil. Heat over medium heat. Add onion. Cook, stirring, for 5 minutes or until soft. Add garlic and chilli. Cook, stirring, for 1 minute or until aromatic. Add black beans, tomato and 60ml (1 ⁄4 cup) water. Bring to the boil. Reduce heat to low and simmer for 5 minutes. Stir in chicken. Cook for 2 minutes or until heated through.
  • Step 2 Place wraps on a clean work surface. Top with salad leaves, bean mixture and dollop with yoghurt. Sprinkle with extra chilli. Roll to enclose filling. Serve with lime wedges.
