Ingredients

  • 7g (1 sachet) instant yeast
  • 300mls milk, warmed
  • 45g (1/4 cup, lightly packed) brown sugar
  • 450g (3 cups) plain flour
  • 2 tsp mixed spice
  • 170g (1 cup) raisins
  • 50g (1/4 cup) mixed peel
  • Henry Jones ® & Co Fruit and Chia Spread, Blood Orange & Chia Seeds, to serve
  • Butter, to serve

Method

  • Step 1 Use a fork to whisk together the yeast, 60ml (1/4 cup) of the milk and 2 tsp of the sugar in a small bowl. Cover with plastic wrap. Set aside for 10 minutes or until frothy.
  • Step 2 Whisk together flour, mixed spice, remaining sugar and a pinch of salt in a large bowl. Make a well in the centre. Add the yeast mixture and remaining milk. Use a wooden spoon to mix until dough comes together.
  • Step 3 Transfer dough onto a clean work surface. Knead for 8 minutes or until smooth. Transfer to a lightly greased bowl. Cover. Set aside in a warm spot for 1 hour or until doubled.
  • Step 4 Flatten the dough on a work surface, sprinkle over the raisins and mixed peel. Knead until combined. Shape the dough into a log. Spray a 10 x 20cm loaf pan with oil. Place the log into prepared pan. Cover and set aside for 45 minutes or until dough doubles in size.
  • Step 5 Preheat oven to 220/200 fan forced. Bake loaf for 10 minutes. Reduce heat to 160/180 fan forced. Bake for a further 15 minutes or until bread sounds hollow when tapped. Set aside to cool slightly. Turn out onto a wire rack. Brush top with 2 tablespoons of the jam. Set side to cool.
  • Step 6 Serve bread sliced and toasted and topped with butter and jam.
