Ingredients

  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon light soy sauce
  • 2 garlic cloves, crushed
  • 4 x 200g Coles Australian pork loin chops
  • 1 tablespoon peanut oil
  • 1/2 pineapple, cut into 1cm pieces
  • 1/4 cup mint leaves
  • 1 long red chilli, seeded, cut into thin strips
  • 1/2 small red onion, finely chopped
  • 1 tablespoon lime juice
  • 1 teaspoon peanut oil, extra
  • Steamed long-grain rice, to serve
  • Lime wedges, to serve

Method

  • Step 1 Combine honey, vinegar, soy and garlic in a large bowl. Add pork and turn to coat.
  • Step 2 Heat oil in large frying pan on medium heat. Add pork and cook for 3 mins each side or until cooked through. Transfer to a plate. Rest for 5 mins.
  • Step 3 Combine pineapple, mint, chilli, onion, lime juice and peanut oil in a medium bowl. Season with salt and pepper. Serve pork with steamed rice, pineapple salsa and lime wedges.
